Meat Candy aka Bacon....In search of my cooking MOJO....

...and a sandwich!!! or What you do when your cooking MOJO goes south.
I like frying bacon in cast iron.
There is nothing better than a BLT or as the new term for bacon, meat candy, an MCLT. I got a hankering for the sandwich, because I saw a post on a friend's FB page for bacon banana pancakes. The bacon cooked into the pancake. It looked so so good. And during a posting exchange about how wonderful her breakfast looked, another person joined in the fun and made the comment that bacon is now called Meat Candy. This was news to me, but I can understand why it is called that. It is a delightful food akin to bonbons and salted carmel and it is so versatile, too. It can be served at any of the three main meals as well as for snacks or on salads, in salads, as pork belly, with chocolate, in beans, on burgers, wrapped around just about anything, shrimp, filets, peppers, asparagus and so on and so forth, oh and eggs, of course.

My MCLT today was a little different, because instead of sour dough bread or rye or whole wheat, I used toasted cinnamon/raisin sprouted grain bread. It added a touch of sweetness to the saltiness of the bacon (meat candy). The bacon sizzled and popped to a perfect balance of crispness and chewiness, which was good because lately, making the simplest of things has been difficult. It seems that my cooking mojo is in hiding somewhere. It certainly has vanished out of my kitchen.  I made the MCLT in hopes of enticing it to come back.

To be honest, I don't know if my mojo is back, but this sandwich was sure good. Maybe, I will try cooking something tomorrow that requires a little more finesse.
